Summer is here, and so is the perfect time to spice up your fresh, crisp salads. Introducing the Cucumber Madness Fiery Summer Salad, a dish that combines cooling cucumbers with the bold, fiery kick of Hellbound Sauces. This salad is easy to make, packed with fresh flavors, and guaranteed to light up your taste buds.

Ingredients

For the Salad:

  •      2 large cucumbers, thinly sliced
  •      1 cup cherry tomatoes, halved
  •      1 small red onion, thinly sliced
  •      1/4 cup fresh cilantro, chopped
  •      1/4 cup fresh mint leaves, torn
  •      1/2 cup feta cheese, crumbled (optional)

For the Dressing:

  •       2 tbsp Cucumber Madness (choose your favorite for the heat level you love!)
  •       1 tbsp lime juice
  •       2 tbsp rice vinegar
  •       1 tbsp honey or agave
  •       1 tsp sesame oil
  •       1 clove garlic, minced
  •       Salt and pepper to taste

Instructions

  1.  Prepare the Vegetables: Wash and thinly slice the cucumbers and red onion. Halve the cherry tomatoes and toss all the vegetables together in a large salad bowl. Add the chopped cilantro and torn mint leaves for a fresh, aromatic base.
  2.  Make the Dressing: In a small bowl or jar, whisk together Cucumber Madness, lime juice, rice vinegar, honey or agave, sesame oil, and minced garlic. Season with a pinch of salt and pepper, adjusting the heat level with more Cucumber Madness Sauce if desired.
  3.  Combine: Pour the dressing over the salad and toss until all the ingredients are evenly coated. Let the salad sit for 5-10 minutes to allow the flavors to meld together.
  4.  Finish and Serve: Top with crumbled feta cheese if desired, and serve immediately. This salad pairs beautifully with grilled meats, seafood, or as a spicy, refreshing standalone dish.

Pro Tips:

For extra crunch, add a handful of roasted peanuts or toasted sesame seeds.
